Classic Vanilla Mousse Recipe
1 quart heavy cream
1 vanilla bean, split lengthwise
Pure vanilla extract to taste
1 1/2 cups granulated sugar
8 egg yolks
1 cup water
In a saucepan, bring to boil the 1 cup of water and 1 ½ cups of granulated sugar and removing right away after 5 minutes. Allow to cool.
Using a double boiler, beat egg yolks and whip the syrup gradually then add the vanilla bean. Cook the custard over hot but not boiling water and stirring constantly until it is creamy and thick. Remove the vanilla bean and make sure to squeeze and pressing out the seeds. Rub the custard through a sifter and stir over a bowl of ice water until it cools.
Whip heavy cream until it is stiff enough to hold a shape and then add vanilla extract to taste and fold the cream into the cooled custard.
